Sweet Potato Triangles

So, I happened to have some left over cooked sweet potato in the fridge and decided I wanted to try something new! These are super easy to make, use little ingredients, and taste great with dips or can be used as a crust for homemade mini pizzas 😉

What you will need (makes ~2 small mini pitas): 
1/2 cup mashed sweet potato (already cooked)
2/3 cup spelt flour (or flour of choice)
1/4 cup egg whites
1 tsp chili powder
1 tsp garlic salt
+ ground pepper and salt

Directions:
1. Mix all ingredients thoroughly in a bowl.
2. Preheat oven to 375F
3. On a baking sheet lined with parchment paper, put the sweet potato mixture in thin pancake-shaped sizes
4. Bake for ~20 minutes until browning and then flip them over to brown the other size (cook until browning).
5. Remove from the oven, cut into triangles – place back into the oven until they reach a desired level of crunchiness for you.
(Mine took around ~40 minutes total cooking time.

PS- I dipped mine in Skotidikas Jalapeño Greek yogurt dip (can be found at costco..see previous post). Super YUM!
